Ingredients

2 Cups spelt flour

2 Cups oat flour

1 Cup whole wheat flour

3/4 Cup corn meal

3 tsp. yeast

1 tsp. salt

3/4 Cup hot water (135 degrees)

1/4 Cup honey

1/2 Cup plain yogurt

8 Tbsp. butter

2 eggs

Preparation

Combine first six ingredients in large mixing bowl. Mix briefly with dough hook if using a mixer; use wooden spoon if by hand. Gradually add the 3/4 cup hot water, the honey, yogurt, butter, and eggs. Mix well and place in an oiled bowl in a warm draft-free spot to rise for 45 minutes. Punch down, divide, form into two loaves and place in two oiled bread pans to rise for another 30-45 minutes. Meanwhile, preheat oven to 325 degrees. Bake for about 35 minutes. Cool in pans for 5-10 minutes, then tip onto wire racks to finish cooling.
