Ingredients

For the cake:

250g margarine

200g caster sugar

4 large eggs, beaten

200g self-raising flour

2 tbsp cocoa powder

3 tbsp boiling water

1 tsp vanilla extract

Chocolate chips ad lib

For the Filling:

200g icing sugar

100g margarine

1 tbsp cocoa powder

Dash of vanilla extract

Boiling water

For topping:

100g high-quality chocolate (milk or dark, ad lib)

Preparation

Beat the margarine and sugar together in a mixing bowl, then beat in the eggs, adding the flour and cocoa powder a little at a time. Stir in the boiling water, vanilla extract and chocolate chips then divide the mixture into two cake tins (with base lined with baking paper) and bake in the oven at 170C until a knife placed into the cake comes out clean. Remove and leave to cool for a few hours.

Filling: Beat the margarine and icing sugar together in a bowl then fold in cocoa powder and stir in vanilla extract. Spread all over the base of the cake and place the other half of the cake on top.

Topping: Melt the chocolate in a water bath and spread all over the top of the cake. Simple!

Leave to set for a few hours then invite some friends over, put on a DVD, make some coffee and enjoy!
