Ingredients

1/2 cup white rice flour

1/2 cup yellow cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon sugar

1/2 cup evaporated milk

1/2 cup water

2 tablespoons butter, softened

2 eggs

1 teaspoon butter for pan

Preparation

  1. Preheat oven to 350.
  2. Put all dry ingredients in a mixing bowl, mix with a fork.
  3. Add wet ingredients, beat until lumps are gone.
  4. Grease 8x8 pan with 1 teaspoon butter.
  5. Pour batter into pan. 6. Bake at 350 for 25 minutes, or until fork comes clean from center.
