Ingredients

1 sweet potato

vegetable oil

1/2 head broccoli

handful of pecans, chopped

angel hair pasta

2 T butter

1 t cumin

salt and pepper to taste

ground Parmesan cheese (optional)

Preparation

Preheat oven or toaster oven to 400 degrees. Cut sweet potato into bite-side pieces. Drizzle with vegetable oil. Roast in oven until crispy on outside and soft on the inside, about 15 minutes. Turn after 7 minutes to prevent burning. Chop broccoli into bite-side pieces. Drizzle with water and steam in microwave on high for about 3 minutes. Boil pasta. Melt 1 T butter on stove over medium heat. Add pecans, cumin, salt, and pepper. Saute for about 3 minutes. Add cooked pasta to pan and additional 1 T butter. Toss. Mix with sweet potato and broccoli. Top with grated Parmesan, if desired.
