Ingredients
–3 red tomatoes
–1 yellow tomato
–1/2 sweet onion
–1 cucumber
–1 green pepper
–4-5 garlic cloves
–3/4 tsp. fresh chili powder OR a small piece of fresh hot chili
–pepper to taste
–salt to taste
–1/4 cup red wine vinegar
–1/3 cup soy sauce
–3 cups V-8 juice or tomato juice
Preparation
Dice vegetables into 1/4-inch cubes.
Mince garlic.
In a blender or food processor, mix garlic, one tomato, V-8 or tomato juice, vinegar, olive oil, soy sauce, and chili to create the base. Add the diced vegetables and mix all of the ingredients together.
