Ingredients

I large onion

1 red bell pepper

1 green bell pepper

2 cloves of garlic

1T olive oil

1 can of pinto beans (undrained)

1 cans of red kidney beans (undrained)

Shredded cheddar cheese

Lite kielbasa sausage or lite sausage

1 tsp. of thyme

1 T of basil

1/4 tsp of Natures Morton Seasoning

salt and pepper to taste

Brown rice (prepared according to package)

Preparation

Slice onion and peppers. Cut sausage into round-bite size pieces. Heat large pot on med-high heat. Add olive oil and heat through.

Next add onion and peppers and season with salt and peppers. Cook about 5 minutes then add garlic. Once vegetables are tender and slightly translucent, add sausage. Continue cooking until onions become completely translucent.

Add in spices and give a stir. Pour undrained pinto and kidney beans into the mix and bring to a boil. Reduce heat and simmer for about 10 minutes.

Serve over prepared rice and sprinkle with cheese.
