Ingredients
1 lb red kidney beans (dried)
1 lb ham steak
3 strips bacon
1 green pepper (diced)
1 large onion (diced)
3 garlic cloves
1 tsp salt
Preparation
Pour about 8 beans at a time into palm of hand to look for rocks (could break your teeth!) Drop beans into empty pot and add chopped garlic, salt and 3 inches of water. Boil 30 minutes. Place in casserole dish.
Chop bacon and saute with onions and peppers until cooked through. Cube ham steak and add to pan to cook. Mix contents of pan into casserol dish. Bake at 300 degrees for several hours, continuously adding water to cover beans while they are cooking.
Done when soft. Serve over rice.
