Ingredients
1 can kidney beans
2 cups cooked rice
1 red pepper
1 stalk celery
1/2 yellow onion
olive oil
lots of paprika
small amount of cumin
some thyme
bay leaf or two
Preparation
Saute the red pepper, celery and onion in olive oil until the onions are translucent. You can add in the paprika, and cumin while it is cooking to bring out their smoky flavor. Meanwhile, heat up the kidney beans along with the bay leaf. After the vegetable mixture is done, add to the beans. When everything is hot, mix in the rice and serve.
