Ingredients

1 Large Onion, chopped

2 Stalks Celery, chopped

3 Tbsp Canola Oil

4 Garlic Cloves, chopped

2 Tbsp All Purpose Seasoning to taste

1 lb Red Beans, soaked overnight and water reserved

2 to 3 Cups Chicken Stock (homemade)

2 Smoked Turkey Legs

1 Bay Leaf

½ Cup Fresh Parsley, chopped

Cooked Rice

Preparation

Heat oil in heavy large pot and sauté onions, celery and garlic for amount 8 minutes. Add smoked turkey legs; sauté 2 minutes more. Add beans and reserved soaking water, and enough chicken stock to the pot, to cover the beans. Bring to a boil; add bay leaf and all-purpose seasoning. Reduce to a simmer for 4 hours or until beans are creamy. If beans do not cream, take a potato masher and gently mash the beans a few times during cooking. Add more stock if necessary so pot does not become dry. Stir in fresh parsley and serve over cooked rice.
