Ingredients

1/4 head red cabbage, cored

1/4 teaspoon fine sea salt

1 1/2 tablespoons red-wine vinegar

1/2 Granny Smith apple (left unpeeled), cored

2 tablespoons extra-virgin olive oil

Preparation

Finely shred cabbage with slicer (you should have 2 cups). Toss cabbage with sea salt and vinegar and marinate, covered and chilled, 1 hour. Just before serving, cut apple into thin matchsticks and stir into cabbage along with oil and papper to taste.
