Ingredients
1 tablespoon vegetable oil
1-2 cloves fresh local garlic, minced
1 pound fresh mushrooms (white or brown or mixture), sliced
1 bunch red chard, washed and cut into ribbons (about 4 cups)
2 tablespoons low sodium soy sauce
1-2 teaspoons (to taste) sesame oil
1/8 - 1/4 cup toasted almond slivers
salt and pepper to taste
Preparation
in a wok heat 1 tablespoon vegetable oil then add the garlic and stir-fry for a minute. add the chopped mushrooms and stir fry for 3-4 minutes then add the red chard and soy sauce. stir fry 5 minutes or so. turn off the heat and drizzle over sesame oil to taste and season with salt and pepper. serve over brown rice and sprinkle toasted almond slivers over top.
