Ingredients

3/4 cup red currents

1 pt.yellow cherry tomatoes

2 Tablespoons pink peppercorns

1 Tablespoons black sesame seeds

2 handfuls of green lettace leaves

5 sprigs lemon thyme

1 tsp. fresh ground sea salt

2 Tablespoons wild honey

2 Tablespoons evoo

2 Tablespoons fresh squeezed lime, lemon or orange juice

Preparation

Slice into halves 1 pint yellow cherry tomatoes and put in a small bowl with 2 Tablespoons EVOO and 1 tsp sea salt to marinate with leaves of fresh lemon thyme. Combine 2 T honey with 2 T squeezed citrus juice, black seame seeds and pink peppercorns. Add to tomatoes and distribute with the red current berries over the lettace leaves. Serve.
