Ingredients
1/2 lb. salmon fillet
1 teaspoon Olive oil
1 tablespoon lemon juice
salt and pepper
4 cups torn Romaine lettuce
1/4 sweet red pepper, chopped
1/4 sweet yellow pepper, chopped
1/2 cup grape tomatoes
1/2 cup red seedless grapes
1 6" zucchini, sliced
1 small carrot
2 Tablespoons Franks Original RedHot Sauce
2 Tablespoons lemon juice
1 Tablespoon virgin olive oil
1 Tablespoon flaxseed oil
Preparation
Season salmon with lemon juice, salt and pepper. Drizzle olive oil over salmon. Grill just until it flakes, about 4 minutes on each side. Combine lettuce, peppers, tomatoes, grapes & zucchini in large salad bowl. Lightly toss with 1/4 teaspoon of Kosher salt, fresh ground pepper and 1/4 teaspoon of sugar. Using short strokes with a vegetable peeler, slice down the carrot over the salad. Lay the salmon on top and drizzle dressing over all. For dressing: combine hot sauce, lemon juice and oils in lidded container. Shake vigorously.
