Ingredients
2 cups finely chopped red onion
1/2 cup red wine vinegar
1/3 cup brown sugar
1 teaspoon brown mustard seeds
1 tablespoon minced fresh ginger
1/2 teaspoon crushed red pepper
1/4 teaspoon salt
1/8 teaspoon ground cloves
Preparation
Bring all ingredients to a boil in a medium saucepan over medium high heat. Cover, reduce heat, and simmer for 15-20 minutes. Uncover and cook until liquid has almost evaporated, 12-15 min. Keep in an airtight container, for up to 2 weeks.
