Ingredients

1 lb. whole wheat penne pasta

Feta cheese, crumbled, to taste

1 lb baby spinach

Roasted red peppers

1 sweet onion

Basil

Olive oil

3 cloves of garlic

Preparation

Dice onion Mince garlic Cut roasted red peppers into strips

Add 1 TB olive oil, onion, and garlic to pan on medium-heat Saute until onions are soft Add red pepper and heat through Add spinach and saute until wilted

Boil water and add pasta Cook for 7 minutes. Drain, reserving 1/2 c. of pasta water

Add pasta and reserved water to pan with onion, spinach, and peppers.

Cook until heated through

Add pasta to serving bowl. Add crumbled feta to pasta and toss Drizzle with olive oil, to taste
