Ingredients

3 tomatoes, chopped

1/4 red bell pepper, finely chopped

1 clove garlic, minced

1 T Basil (thyme and/or oregano)

1/4 t salt

1 t pepper

5 T Extra Virgin Olive Oil

(Optional 1/2 onion, finely chopped)

Bread of your choice.

Preparation

In a small bowl, combine tomato, bell pepper, garlic, salt, pepper, and basil with olive oil. Mix and let stand for at least 5 minutes to marinate. (This step could be prepared in a tupperware container, and placed in the fridge overnight.)

Heat a small frying pan on low with the tomato-olive oil mixture. Stir occasionally, until the mixture bubbles and the liquid reduces. About 10 minutes.

Serve with sliced bread.
