Ingredients

1 large sweet red pepper, roasted, peeled, and seeded, -or- 1/2 cup canned roasted red peppers

4 green onions, sliced

1 clove garlic, halved

1 Tbsp cooking oil

2 tsp Dijon mustard

1 tsp honey

1/4 tsp snipped fresh basil -or- 1/4 tsp dried basil, crushed

1/8 tsp salt

Dash black pepper

Preparation

Coarsely chop red pepper and set aside. In a skillet, cook onions and garlic in oil until tender. Remove from heat; cool slightly. In a blender container or food processor bowl, combine red pepper, onion mixture, mustard, honey, basil, salt, and black peper. Cover; blend or process until smooth. Serve warm.
