Ingredients
2 large red bell peppers
2 large eggs
1-2 garlic cloves grated
1 firm tomato chopped
1/4 cup sliced black olives
1/2 cup mozzarella/cheddar cheese
1/4 cup feta cheese
1 Tbsp chopped basil
Salt and freshly ground black pepper to taste
Preparation
Preheat oven to 425°F.
Slice off the top of each red bell pepper.
Place the peppers on a cookie sheet or glass baking dish.
Break an egg into each pepper.
Mix tomatoes, olives, garlic and basil. Season with the salt and pepper.
Add vegetable mix to the egg in the pepper and mix gently with a fork.
Bake 15 min.
Top the peppers with the cheese and bake until the cheese is bubbly and egg is set (10-12 more minutes).
Let cool for 5 minutes and serve.
