Ingredients
6 med red potatoes
Butter
salt and pepper
seasoned salt
dried parslay
dried rosemary (crumbled)
dried red pepper
Preparation
6 med red potatoes scrub clean prick with a fork put in microwave 5-8 minutes
Check for doneness - undercook slightly. Do not over cook.
Remove from micro and slice in half. Take same knife and cross-hatch, being careful not to slice through the potato.
Rub butter over top of potato Sprinkle with any or all of the following: salt and pepper seasoned salt dried parslay
Potatoes can be made up to this point ahead of time. Cover with plastic wrap and set to the side over in the frig overnight.
Place on hot grill. After 2 minutes turn one quarter (provides the cross-hatch grill marks). Grill another 2-5 minutes being careful not to burn. Remove to a plate off grill or place on top shelf of grill to keep warm while grilling rest of meal.
