Ingredients
2 whole Red Snappers
1/2 tablespoons Salt
1/2 cup Vegetable Oil
3 big red Tomatoes, chopped
1 big yellow Onion, chopped
1/2 head Garlic, crushed
3 tablespoons Fish Sauce (found in Asian Food Market)
1 bunch Scallions, finely cut
Dash Ground Black Pepper
1 teaspoon Boullion Seasoning, chicken flavored
Preparation
- Sprinkle and rub salt all over the fish.
- Heat the oil in medium flame, in a large frying pan until hot but not smoking and fry the fish on each side for about 10 minutes until brown, crispy and cooked. Set aside in a serving platter.
- Saute the garlic, onions, tomatoes and fish sauce until the tomatoes and onions are very soft and becomes saucy.
- Add the pepper, boullion and scallions. Stir for 1 minute and pour the mixture on top of the fish and serve immediately.
