Ingredients
2 tbsp olive oil
4 small carrots
3 beets
3 stalks of celery
1 Yukon gold potato
2 cloves of garlic
1 large yellow onion
1/2 can of corn
3 cups vegetable broth
salt, pepper
Preparation
Chop all vegetables. Saute onions and garlic till soft…add carrots and celery, cook for a few minutes. Add potatoes and beets and broth. Bring to a boil, add corn. Cover and simmer until root vegetables are soft; Blend until soup retains a rich texture. Add salt & pepper to taste.
