Ingredients
Crust
1/2 LB Unsalted butter, room temperature.
1/2 Cup Sugar
2 cups Flour
1/8 tsp Salt
Filling
6 large eggs, room temperature
3 cups sugar
2 tbl spoons grated lemon zest, approx. 4-6 lemons
1 cup fresh lemon juice
1 cup flour
Confectioner sugar for finishing
Preparation
Preheat oven to 350 F
Crust Cream butter and sugar until light and fluffy. Combine, flour, salt and mix together until ball forms. Place dough in a glass baking dish and press out evenly along bottom and sides. Bake 15-20 minutes until golden brown.
Filling Whisk eggs, sugar, lemon zest, lemon juice, and flour together until combined well. Pour over baked crust and bake 30-35 minutes. Filling should be settled.
Let cool and sprinkle with confectioners sugar once cool for finishing touch.
