Ingredients
2 lbs. watermelon large dice
1 lb. tomato cut into wedges
1 red onion julienne
8 oz. goat cheese in 1/8 oz. pieces
3 sprigs mint chiffonade
2 oz. red wine vinegar
2 oz. extra virgin olive oil
pinch kosher salt
1 head boston bibb lettuce
Preparation
in a large mixing bowl combine all ingriedients except kosher salt and boston bibb lettuce. add 1/2 of kosher salt and taste, if necassary add remaining salt. cover salad plates with boston bibb lettuce and place salad over all plates equally. garnish with fresh mint sprigs.
