Ingredients
2 Pound Piece Of Watermelon (Preferably Seedless)and Chilled.
1 fresh Lime 2 teaspoons Fresh Lime Juice
1 Tablespoon Chopped Fresh Cilantro Leaves Or Mint
1 or 2 Tablespoons Light Rum
Dash Or Cayenne Pepper (Optional)
Preparation
Remove Rind and seeds from the watermelon cut melon into 1-inch pieces. Into a bowl finely grate zest from lime and squeeze enough juice to measure 2 teaspoons. Add watermelon, cilantro, and rum and toss to combine. Chill watermelon salad 15 minutes. Before Serving sprinkle the salad with a dash of cayenne pepper.
