Ingredients
15.5 oz can Goya pinto beans, undrained
1 tbl vegetable oil
1/4 small onion, chopped (optional)
1 clove garlic, minced (optional)
2 tbl shredded cheddar cheese
Salt & pepper to taste
Preparation
In medium bowl, mash beans. If using onion and/or garlic, cook in oil in medium skillet on medium heat until soft. If not using onion/garlic, heat oil. Add beans, salt & pepper. Cook, stirring often, until bean liquid starts to evaporate. Reduce heat & simmer until desired consistency-about 5 minutes. Serve with cheese on top.
