Ingredients

3 cups a lll purpose flour

2 cups granulated sugar

1 tablespoon ground cinnamon

1 tsp baking soda

1 tsp salt

4 eggs lightly beaten

1 1/4 cups veggie oil

2 cups diced fresh strawberries

1 cup chopped almonds , pecans or walnuts

Preparation

  1. Preheat the oven to 350 degrees Lightly grease a 9 X 5 inch loaf pan
  2. In a large bowl, combine flour, sugar, cinnamon baking soda and salt. Add eggs and oil, stirring just until dry ingredients are moistened Fold in strawberries and nuts
  3. Transfer the batter to a loaf pan Bake for 1 hour or until a tester inserted into the center comes out clean. Let cool in the pan for 5 mins. then remove from the pan and cool completely on a wire rack. Note This freezes beautifully Slices of this bread toast well too.
