Ingredients
3 cups a lll purpose flour
2 cups granulated sugar
1 tablespoon ground cinnamon
1 tsp baking soda
1 tsp salt
4 eggs lightly beaten
1 1/4 cups veggie oil
2 cups diced fresh strawberries
1 cup chopped almonds , pecans or walnuts
Preparation
- Preheat the oven to 350 degrees Lightly grease a 9 X 5 inch loaf pan
- In a large bowl, combine flour, sugar, cinnamon baking soda and salt. Add eggs and oil, stirring just until dry ingredients are moistened Fold in strawberries and nuts
- Transfer the batter to a loaf pan Bake for 1 hour or until a tester inserted into the center comes out clean. Let cool in the pan for 5 mins. then remove from the pan and cool completely on a wire rack. Note This freezes beautifully Slices of this bread toast well too.
