Ingredients
1 1/2 cups sugar
1 teaspoon salt
2/3 cup oil
1 egg
1 cup sour milk (1 cup milk, 1 tablespoon lemon juice)
1/2 teaspoon baking soda
1 teaspoon vanilla
2 1/2 cups flour
2 1/2 cups raw rhubarb, sliced into 1/2 inch pieces
Topping:
1/2 cup sugar
1 tablespoon butter or margarine, melted
Preparation
Preheat oven to 325 degrees.
Mix all ingredients except rhubarb and beat well. Fold in sliced rhubarb last.
Put into two greased 9x9 pans or one 9x13 pan. Spread topping over all. Bake at 325 degrees for 40 minutes, until nicely browned. Do not overbake.
