Ingredients
1/2 cup butter
1 1/2 cup sugar
2 eggs
1/2 tsp salt
1 tsp. baking soda dissolved in 1 cup milk
2 cup flour
3 cup rhubarb or so…to taste
Preparation
Cream butter and sugar, salt, eggs together. Alternate adding flour and milk. (Buttermilk works too) Add rhubarb. Bake at 350 for 50-55 minutes. Top with 1/4 c. sugar, 1 cup coconut, and 1 tbsp. cinnamon. Broil CAREFULLy until browned. Will burn. Makes an 8 1/2 x 11 pan.
