Ingredients
Coffee Cake:
1 stick margarine
1 1/2 cups sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1 cup butter or sour milk
2 cups flour
2 cups rhubarb
Coffee Cake Topping:
1/2 cup brown sugar
2 tablespoons Butter
2 tablespoons flour
1 teaspoon cinnamon
Preparation
Combine margarine, 1 1/2 cups sugar, egg and vanilla. Mix until smooth. Add to this mix soda, milk, and flour. Mix until smooth. Add rhubarb and stir. Pour mixture into 9’ x 13’ cake pan.
In another bowl, combine the coffee cake topping ingredients. Pour this dry mix over the rhubarb cake.
Bake above at 325 degrees for 50 minutes. Best served cool.
