Ingredients

Pie Crust:

1 C. sifted flour

5 T. powdered sugar

1/2 C. butter

Pie Filling ingredients:

2 eggs

1 1/2 C. sugar

1/4 C. flour

3/4 tsp. baking powder

pinch salt

3 C. unsweetened rhubarb

Preparation

Pie Crust: Mix three ingredients and pat into 8 x 8" pan. Bake 15 min. at 350 degrees. Filling: Beat eggs. Add dry ingredients. Cut up and add rhubarb. Pour over crust. Bake 35-40 min. at 350 degrees
