Ingredients

1 cup whole wheat flour

1/2 cup oatmeal uncooked

1 cup brown sugar

1/2 cup melted shortening

1 tsp cinnamon

1/4 tsp salt

4 cups diced rhubarb

1 cup sugar

1 cup water

1 tsp vanilla

2 Tbsp cornstarch

Preparation

Mix flour, oatmeal, brown sugar, shortening, and cinnamon until crumbly; press 1/2 of mixture into greased 9" square pan. Add rhubarb. Combine white sugar, water, vanilla, and cornstarch. Cook over low heat until thick and clear. Pour over rhubarb; top with remaining crumbs. Bake at 350 degrees for 1 hour. Cut into squares. Serve warm or cold topped with ice cream or whipping cream, if desired.
