Ingredients

1 1/2 c oatmeal

1 1/2 c brown sugar

1 1/2 c four

1 1/2 t cinnamon

3/4 c melted butter

6 cups rhubarb

1 1/2 c sugar

3 T cornstarch

1 1/2 c water

1 1/2 t vanilla

a few drops of red food coloring

Preparation

Mix together oatmeal, brown sugar, flour, cinnamon, and butter and pat into the bottom of a 9X13 baking pan.

Combine 1 1/2 c sugar, 3 T cornstarch, and 1 1/2 c water in a pan. Cook until thick. Remove from heat and add vanilla and a few drops of food coloring.

Place rhubarb on the top of the oatmeal mixture. Pour thickened sugar/cornstarch mixture over the rhubarb. Cook 350 for @ 50 minutes.
