Ingredients

2lb Rhubarb

8 - 12 oz sugar, preferably unbleached.

Sticky insides of a vanilla pod

1 litre of vodka - good quality

Preparation

Wash and cut rhubarb into 1" chunks. Put into a suitable container that has a lid. Add sugar, vodka, vanilla and stir round.

Keep in a dark place and stir each week for about 6 wks. Then, strain and bottle.
