Ingredients

Butter

8 slices smoked bacon, chopped

2 carrots, chopped

1/2 onion, chopped

3 stalks celery, chopped

3 fresh tomatoes, peeled & chopped

1 sprig thyme

1 sprig rosemary

3 potatoes, coarsely diced

1/4 head of cabbage, chopped

1 can white beans, drained

Salt and pepper

6 chicken bullion cubes

9 cups of water

Preparation

Sauté bacon and onion in butter for 3 minutes. Add carrots and celery. Cook until soft. 5 mins. Add tomatoes, thyme and potatoes. Cook 2 mins. Add beans, cabbage, water, rosemary and bullion. Salt and pepper to taste. Bring to a boil and reduce to low. Simmer for 1 hour.
