Ingredients

1c rice

1can chicken broth

1/2 tsp salt

1/2 tsp pepper

1 med onion

1/2c celery

1/2c red pepper

3Tbs pine nuts

1/4c chopped parsley

Preparation

Cook rice in chicken broth, add salt and pepper.

Saute onion, celery and red pepper in a little oil.

Toast pine nuts.

Mix cooked rice with veg., pine nuts and parsley.
