Ingredients

1c. rice

1can chicken broth

1/2 c. onion, celery, red bell pepper

1/4 c. chopper parsley

1/4 c.pine nuts

1Tbs.oil

1Tbs.butter

1/2 tsp salt and pepper.

Preparation

Steam rice in chicken broth, salt and pepper.

Toast pine nuts.

Saute Vegetables in oil and butter.

When rice is done mix with vegetables and pine nuts. Serve
