Ingredients
1 bag sucess whit, brown or jasmine rice
1 tbsp garlic flavored olive oil
16 oz pre sliced white mushrooms (about 6 c)
1 (8oz) tub onion and chive flavored cream cheese
1 lb cooked, peeled and deveined medium sized shrimp (about 40)
2 c pre rinsed baby spinach leaves
1/4 c water
1 tbsp lemon juice
1/2 c shredded parmesan cheese
Preparation
prepare rice according to package directions. heat oil in a large non stick skillet over medium high heat. add mushrooms and cook 6 mins or until mushrooms are golden. stir in cream cheese until melted. add shrimp, spinach and water; cook until heated through, about 2 mins. fold in cooked rice, lemon juice, and more water (if needed), to keep the mixture creamy. top w/ parmesan cheese.
