Ingredients
1 T canola oil
1 ea, onion, carrot, and stalk celery, chopped
1/2 of red pepper, chopped
1 can 14 1/2 oz chicken broth
1 1/2 c Minute White Rice uncooked
1 c. frozen peas
Preparation
Heat oil, cook onion, carrot, celery and pepper, till tender add broth, stir in rice and peas, cover simmer 5 min remove from heat, Let stand 5 min, before serving makes 4 servings
can use bag of frozen mixed vegetables or frozen broccoli
