Ingredients
Rice 1 cup sweet, sushi and Arborio all work well
milk 5 cups - cow, soy, rice or oat or a mixture
saffron strands soaked in 1T warm water for 30 min
vanilla bean, split in half
brown rice syrup 1/3 cup or use sugar
raisins 1/3 cup (optional)
sea salt
cardamom pods 3-4, shelled and finely ground
lemon zest 1T
Preparation
Combine all above, except lemon zest. Mix well and bring to boil, then on very low heat stir frequently for 1-2 hours. Just allow ingredients to steep to create a thick and creamy texture. Just before serving remove vanilla bean and stir in lemon zest.
Serve the pudding warm or chilled topped with poached pink quinces.
