Ingredients

1/2 cup white rice

4 cups soy milk

2 tsp vanilla extract

1 tsp ground cinnamon

Dash of nutmeg

1/4 cup sugar

Preparation

Preheat oven to 275 Mix all ingredients in a bowl and place in a 1 1/2 quart lightly oiled overproof dish. Bake covered for 3 hours, or until the pudding sets.
