Ingredients

3 slightly beaten eggs

2 cups milk

1 1/2 cup cooked rice

1/3 cup sugar

1/2 tsp salt

1 tsp vanilla

Ground cinnamon

Preparation

In bowl combine eggs, milk, rice, sugar, vanilla and salt.

Mix well.

Bake in a 10x6x2 inch baking dish at 325F for 25 minutes.

Stir.

Sprinkle with cinnamon.

Continue baking until knife inserted in half way between centre and edge comes out clean - usually 20 - 25 minutes longer.

Serve warm or chilled with light cream (if desired.)
