Ingredients
2 cups cooked basmati rice, chilled
1 cup cooked lentils, chilled
2 stalks celery, sliced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 small red onion, finely chopped
2-3 tablespoons chopped fresh parsley
1/4 cup balsamic vinaigrette (more or less to taste)
Preparation
In medium mixing bowl, combine chopped celery, bell peppers,onions, and parsley. Add lentils and rice. Toss with vinaigrette and chill at least 4 hours to blend flavors
