Ingredients

8 cups cooked hot rice

1 sweet red pepper

1 purple onion-peeled and diced

1 green pepper

6 scallions sliced

2 shallots diced

1 pkg frozen peas

1 cups currants/raisins

1/2 cup chopped black olives

1/4 cup chopped Italian parsley

1/2 cup fresh dill

dressing:

makes 1 cup

1 TBS dijon mustard

4TBS red wine vinegar

1/2 tsp salt

1 TBS sugar

1/2 tsp pepper

1/2 cup oil

combine ingredients and wisk in oil.

Preparation

cook rice and combine with dressing. then add veggies and refrigerate. can easily be made ahead of time. double dressing and use what is necessary to work best with the salad.
