Ingredients

2 Tablespoons vegetable oil

1 cup sliced green onions

1 cup finely choppled carrots

1 cup finely chopped red bell pepper

4 cups of pre-cooked rice (cooked in chicken broth)

1 jalapeno or serrano pepper, seeded and minced

4 Tablespoons chopped cilantro or parsley

2 Tablespoons fresh lime juice

2 Tablespoons low-sodium soy sauce

Hot pepper sauce

Preparation

  1. Heat oil n a large skillet over medium-high heat. Add onions, carrots, red bell pepper, and jalapeno pepper; cook 3 to 5 minutes, stirring often.

  2. Stir in rice, chopped cilantro or parsley, lime juice, soy sauce, and pepper sauce to taste; cook 2 to 3 minutes or until thoroughly heated through.
