Ingredients
9 oz. best quality dark chocolate
1/4c superfine sugar
2TBS. cocoa Powder
2TBS light flowery honey
3TBS unsalted butter
2 egg yolks
8 0z Marscapone Cheeze
Preparation
Melt the choclate, sugar, and cocoa powder together in the top of a double boiler over gently simmering water (or microwave Hi 1-2 minutes stirring 1/2 way thru)
Beat in the honey and butter
Add the egg yolks , then the marscapaone, and continue to beat until smooth and glossy
Spoon mixture into small ramekins and freeze until solid or make in a loaf pan and freeze. Serve in slices with fresh raspberries.
Slice in advance with a hot sharp knife and return to the freezer until ready to serve.
