Ingredients

-2/3 milk

-1 cup semisweet chocolate chips

-1/4 cup cold water

-2 tablespoons cornstarch

-1 (14-oz.) can sweeted condensed milk(can use low fat)

-3 large eggs, beaten

-1 teaspoon vanilla extract

-3 tablespoons butter or margarine

-1 ready-made graham cracker crumb pie crust

-2 cups Cool Whip(can use low fat)

Preparation

-Heat milk until it just begins to bubble around the edges in a medium-size saucepan over medium heat.(Do not let boil.) Remove from heat, and whisk in chocolate chips until melted. -Cool for about 10 minutes. -Stir together cold water and cornstarch until dissolved. -Whisk cornstarch mixture, sweeted condensed milk, eggs, and vanilla into chocolate mixture. Bring to a boil over medium heat, whisking constantly. Boil for about 1 minute until mixture thickens and is smooth. (Be careful not to overcook.) -Remove from heat, and whisk in butter. Pour mixture into graham cracker crumb crust. Cover and chill for at least 8 hours. -Just before serving set Cool Whip out to soften. Spread Cool Whip over top of chilled pie evenly.
