Ingredients
2 cans shoepeg corn (drained)
1 can blackeyed peas (drained)
1 can black beans (drained)
1 C. Italian dressing
1 C. Catalina dressing
2 T. Fresh chopped cilantro
4 Roma Tomatoes (diced)
1 large white onion (diced)
2 Jalapenos (diced-with seeds removed)
Preparation
Combine ingredients.
I think shoepeg corn is just white corn – I’ve substituted it when I couldn’t find shoepeg corn on the shelf.
Be careful handling the jalapenos.
I’ve also made it with just Italian dressing so I didn’t have to buy a whole bottle of Catalina, and it works just fine. It’s also great with light salad dressing – doesn’t have to be the full-fat kind.
This makes an enormous quantity – enough for two big bag of chips.
