Ingredients
8 duck legs
6 garlic cloves
salt
oregano (mexican)
Pork fat
Preparation
- Rub duck legs with salt and oregano. Place in deep baking dish. Cover and marinate overnight in pork fat (to cover) and garlic cloves
- Bake 350 for two hours (on cookie sheet to contain mess).
- Remove (and retain) skin and de-bone. Brown duck meat in a bit of pork fat
- Fry skin in pork fat until crispy. Remove from pan and drain/blot dry. Chop into bits
- Serve duck meat hot with mexican condiments and top with fried duck skin bits.
