Ingredients

400g spaghetti

2tbsp olive oil

350g ricotta cheese

1c basil leaves

1c freshly grated parmesan cheese

2tbsp lemon juice

2tbsp finely grated lemon rind

sea salt and cracked black pepper

shaved parmesan cheese to serve

Preparation

Cook pasta in a large pot of boiling water until al dente.

Place the oil, ricotta, basil, parmesan, lemon juice, lemon rind, salt and pepper in a bowl and toss well to combine. Add to the pasta and serve with extra parmesan.
