Ingredients

3 pounds Ricotta chesse (whole)

12 eggs

1 1/2 cups sugar

1 tablespoon vanilla extract

1 med. orange (zest)

1 lemon (zest)

12 oz. chocolate chips

oz. of bourbon (optional)

Preparation

preheat oven to 350 degrees. Seperate 12 eggs. Whip whites to a stiff peak. In a large bowl mix together Ricotta, sugar, vanilla, egg yolks and orange and lemon zests. Fold in egg whites then chocolate chips. Bake in 10 in. spring pan covered for 45 min. then uncovered for 45 min.
